Doing your own egg liqueur is not a complicated task, and works for less than half an hour! For 1L of this tasty drink you need the following ingredients:

  • 6 yolks (of fresh eggs, size M)
  • 350ml condensed milk (7.5% fat)
  • 250g powdered sugar
  • 25L white rum
  • 1 vanilla pod

First, cut the vanilla pod lengthwise and scrape the pith out with a sharp knife. Separate the eggs. Put the 6 egg yolks, together with the powdered sugar and vanilla seeds in a bowl and stir until creamy for about 5 minutes – preferably with the hand mixer. Add the condensed milk and white rum and beat over a very hot water bath for 6-8 minutes. The mass should be homogeneous and viscous, but it must not cook! Fill the finished eggnog into bottles and close them immediately. The drink can be stored in the refrigerator for up to 4 weeks.

Even more aromatic is the popular eggnog, if you prepare it with orange. The combination of orange juice, vanilla, freshly grated orange peel, egg yolk and rum tastes simply fascinating – try the recipe to convince yourself! For this purpose you need the following (for 1.5L liqueur):

  • 100ml orange juice (pressed as fresh as possible)
  • 2 teaspoons orange peel, grated
  • 7 yolks, very fresh
  • 250ml white rum
  • 400ml of milk
  • 250g sugar
  • 1 vanilla pod

First, you should rinse the orange thoroughly under running hot water. Halve this and squeeze one half in a glass. Peel the other half and finely grate the skin (you need about 2 teaspoons of it). Cut the vanilla pod lengthwise and scrape the pith out with a knife. This should be – together with the orange juice, peel, milk and half of the sugar, in a saucepan, and boil over a gentle heat and stirring occasionally. In the meantime, separate the eggs and beat the egg yolks with the rest of the sugar in a hot water bath until frothy. When the milk-orange juice mixture boils, add it to the foam mass. Then you should remove everything with a wooden spoon in a water bath to the rose. Pour the finished egg crème through a fine sieve and let it cool slightly. Finally, you should beat the cream in the blender at the highest level, and add the rum slowly. Already finished!

With the homemade eggnog you can make fascinating chocolates. For 24 pieces you need:

  • 75ml eggnog
  • 200g white chocolate
  • 125g ground almonds
  • 25g butter

Put the chocolate with the butter in a pot and let it melt slowly in a mild heat. Add a portion of the ground almonds (about 100g), as well as the eggnog hizu. Mix the ingredients very well together and remove the pot from the heat. It is best to let the resulting mixture cool overnight. The next day you make little balls out of it – with the help of a teaspoon or ice cream scoop (depending on the desired size of the chocolates). The chocolates should then roll in the remaining almonds, and put paper cups. And done! The chocolates may also be decorated with almond leaves. It is best to keep it in the refrigerator so that it does not melt.
