For 6 servings you need the following ingredients:

  • 8 eggs
  • 3 gherkins (about 40g)
  • 100g ham, cooked
  • 2 bars of celery
  • 200g mayonnaise
  • 2 tsp granular mustard
  • 150g whole milk yoghurt
  • 1 apple, small
  • 5 bunch chives
  • 1 tablespoon capers
  • salt
  • Pepper, freshly ground

First, you should cook the eggs covered hard for about 10 minutes. Rinse them with cold water and peel them – the easiest way to do this is to tap and roll the eggs on the work surface, causing the shell to crack. Then chop the eggs roughly with a sharp knife, and set aside 1-2 half to decorate the finished salad later. Wash, quarter and core the apple and dice it finely. The gherkins and the ham should be diced as well. Wash and clean the celery, remove the threads and cut into thin slices. The capers let you drain. Mix the mayonnaise with the yoghurt and season with salt, pepper and mustard. Stir the ingredients with the sauce in a large bowl and let the salad soak in the fridge for half an hour. In the meantime, rinse the chives, shake dry and cut into fine rolls. Sprinkle with the salad before serving and decorate with the egg halves. Finished!

For this healthy and low calorie recipe you will need (for 3 servings):

  • 3 eggs, hard boiled
  • 200g granular cream cheese
  • 1 spring onion
  • 1 tsp mustard
  • 1 pinch of pepper
  • 1 tsp salt
  • 1 pinch of curry powder
  • some Sylt dressing

Peel and dice the eggs and place them, together with the cream cheese, in a bowl. Add the mustard and finely chopped leek onion and sprinkle with salt, pepper and some curry powder. Mix the ingredients very well together, and add some Sylt dressing at the end – but the salad should not get too liquid.

For this exotic and slightly spicy version of the classic egg salad you need (for 2 portions):

  • 3 eggs, hard boiled
  • 100g natural yoghurt
  • 5 peppers, green
  • 80g radish
  • 2 tbsp. Garden cress
  • 2 tablespoons capers
  • 2 tablespoons of orange juice
  • 1 mini cucumber
  • 2 leaves of romaine lettuce
  • 1 tomato, small
  • 1 tsp mustard
  • 2 teaspoons olive oil
  • 5 tsp cayenne pepper
  • 2 pieces of crispbread
  • salt

Peel and dice the eggs. Wash and clean the tomatoes, cucumbers, radishes and peppers, and cut them small. Mix the yoghurt with the oil, mustard, orange juice, cayenne pepper and capers, and season with salt. Take a large bowl and mix all the salad ingredients with the finished sauce. Before serving, sprinkle the salad with 2 tablespoons of garden cress, and arrange each serving with a piece of romaine lettuce. This fits a piece of crispbread. We wish you good appetite!
